Awesome recipes which will get families out of those January blahs

Prepare your taste buds for some awesome recipes. These bold and delicious concoctions will shake your family and friends out of the January blahs! Take it from me, you will want to cut these recipes out of the paper and keep them in your "favorites" folder!

Oven Fried Cinnamon Honey Chicken


1/2 C. flour
2 tps. salt
3/4 tps. cinnamon
1/4 tps. turmeric
1/4 tps. pepper
1 egg
2 Tblsp. milk
1/3 C. dried breadcrumbs
2 Tblsp. oil
3 lbs. chicken pieces
Sauce:
1/4 C. melted butter
1/4 C. honey
1 Tblsp. lemon juice

Combine flour with all spices. Beat egg and milk. Coat chicken pieces with flour. Combine breadcrumbs with egg mixture to form a soft moist mixture. Roll floured chicken pieces in moist crumb mixture and arrange skin side up in roasting pan. Sprinkle with the oil. Bake about 40 minutes or until crisp and brown. The last 15 minutes pour over the combined melted butter, honey and lemon. This recipe works well with skinless chicken.

Paper Bag Chicken


Margarine
Salt
Pepper
1 whole fryer
Chopped celery
Chopped bell pepper
Chopped onion
Chopped garlic

Rub margarine all over whole fryer, inside and out. Salt and pepper fryer, inside and out. Stuff fryer with chopped vegetables. Place fryer in a brown paper bag which has been greased inside. Roll up the open end and bake at 350 degrees F for 30 minutes per pound.

Texas Ranch Beef Brisket


1 (4 pound) beef brisket
2 Tblsp. chili powder
2 Tblsp. salt
1 Tblsp. garlic powder
1 Tblsp. onion powder

1 Tblsp. black pepper
1 Tblsp. sugar
2 tps. dry mustard
1 bay leaf, crushed
1 (10 ozs.) can beef broth

Make a dry rub by combining chili powder, salt, garlic powder, onion powder, black pepper, sugar, dry mustard and crushed bay leaf. Season the raw brisket on both sides with the rub. Place in roasting pan and roast, uncovered, for one hour at 350 degrees. Add the beef broth and enough water to make 1/2 inch liquid in roasting pan. Lower oven to 300 degrees, cover pan tightly and continue cooking for 3 hours or until fork tender. Trim the fat and slice meat thinly across the grain.

Crispy Onion Patties


2 1/2 C. onions, finely chopped
3/4 C. flour
1 Tblsp. granulated sugar
1 Tblsp. cornmeal
2 tps. baking powder
1 tps. salt
3/4 C. milk

Mix dry ingredients, then add milk (batter should be fairly thick). Add chopped onions and mix thoroughly. Drop by spoonsful into hot oil. Flatten slightly when you turn them.

Swiss Potato Bake


2 lbs. frozen hash browns
1 pint whipping cream
2 C. grated Swiss cheese
1/2 C. (1 stick) butter, melted
Salt and pepper

Put hash browns into a 13 x 9-inch pan. Sprinkle with salt and pepper. Cover with grated cheese. Pour cream evenly over top. Drizzle with melted butter. Sprinkle with paprika, if desired. Bake at 350 degrees F for 1 to 1 1/2 hours.

Stuffing Balls


1/2 C. chopped onion
1/2 C. chopped celery

12 ozs. corn, drained
8 ozs. stuffing mix
1/2 tps. salt
1/4 tps. pepper
2 eggs
1 C. milk

Sauté onion and celery in butter in a saucepan. Add remaining ingredients and mix well. Shape into walnutsize balls.

Put into a 10-inch round pan. Pour 2 tablespoons melted butter over the stuffing balls.

Bake, uncovered, at 375 degrees F for 15 minutes.

Patti's 1880s Restaurant Sawdust Pie


7 egg whites, unbeaten
1 1/2 C. granulated sugar
1 1/2 C. graham cracker
crumbs
1 1/2 C. pecans
1 1/2 C. coconut
1 (9-inch) unbaked pie shell

Heat oven to 325 degrees F.

Mix all ingredients together and stir by hand. Pour into unbaked pie shell. Bake until glossy and set (about 25 to 30 minutes).

Do not overbake! Serve warm with sliced bananas and whipped cream.
